Focaccia Sandwich with Spring Greens

Great dinner tonight that was VERY quick and easy that I wanted to share. The recipe comes from the Cooking Light Vegetarian Cookbook. There are instructions in the recipe to make your own focaccia bread should you so desire but I cheated and bought it from the store.

1. If you buy the focaccia, split it in half lengthwise. Spread some olive oil on the top and stick it in the oven for a few minutes until it's warm and a bit crispy.
2. Slice tomatoes and some red onion should you so desire.
3. Make your sandwich! We put sliced provolone, arugula, sliced roma tomatoes on ours and drizzled it with a mix of balsamic vinegar and olive oil (from Midtown Olive Press).
